Ingredients
- Rice
- Kidney beans
- Chopped tomatoes
- Chilli flakes
- Salt and pepper
- Stock cube
- Green pepper
- Courgette
- Celery
- Red onion
- Leek
- Mushrooms
- Oil
Method
- Bring the rice to boil in cold water.
- Meanwhile chop the vegetables (not the kidney beans) into rough, small pieces and fry in vegetable oil.
- As the begin to soften, add a touch of salt and pepper, and a decent sprinkling off chilli, just enough to feel the heat on your tongue and in your stomach.
- Once the vegetables have sufficiently softened, stir in the can of chopped tomatoes.
- Crumble a stock cube and stir it into the mixture.
- Add the kidney beans and simmer for ten minutes.
- Drain the rice and serve.
